January 2013

We wanted to email our customers and friends to let them know we are changing our operation at Moss Hill Farms.   Due to the increasing costs of maintaining a retail inventory  (processing,  packaging, labeling, freezer costs, etc),  we will no longer be offering our beef and lamb retail to the public.   We are going to go back to just raising our calves and lambs to sell on the live market at weaning age.     We hate to get out of the retail end of things mainly because of the great people we have met through doing that.    But the costs of that end of the business have simply gotten too high.     Farming requires a very sharp pencil and we simply can no longer justify the increased expenses involved with packaging and marketing our meat retail.

We will however,   still have a limited number of steers each year that we are going to finish out to slaughter size and offer to the public in bulk shares.   We realize this program isn’t for everyone,  but if you would like to purchase a  1/4 or 1/2  beef share,  we’d love to provide that to you.   Purchasing your beef through our bulk share program is very cost effective and if you don’t think you can use quite that much meat at one time, remember that splitting one of our shares with another family is a great way to benefit from the cost savings too.    We will only have about 10 steers this year that we grow out,  so the numbers are limited.   We will slaughter the first group later this spring and then another group in the fall.    If you think you may be interested just let us know via email and we’ll put you on the list.      Just for planning purposes in case you want to go in with another family,   a 1/4  beef share will be between 75 and 100 pounds of packaged meat,  depending on the size of the steer at the time of slaughter.  A 1/2 share will be between 150 to 200 lbs of packaged meat and a whole share will be around 350 lbs.  We will have more detailed information regarding pricing and size of the bulk shares posted on our website in the very near future.

Thank you very much for ordering from us in the past,  we really appreciate your support.    We hope to continue to hear from you in the future.

Moss Hill Farms

Welcome to Moss Hill Farms.  Our family has been raising cattle here in the beautiful low country of South Carolina for almost 20 years.  We believe that our products are the finest available.  If you've never tasted pasture raised beef or lamb you are in for a treat!    Because our animals are raised naturally on pasture, the meat has a hearty, robust flavor.  Our beef and lamb is healthier for you than commercially mass produced meat, and you can rest assured that our products are packaged and handled with safety as a priority.

'We are committed to raising our animals humanely, on pasture as nature intended.  We want to provide your family with the same safe, healthy and delicious beef and lamb that our family enjoys."

Our cattle and lambs are raised here and spend their days grazing on natural pasture.  They are never confined to a feedlot. They never receive any antibiotics or hormones.  We work closely with our veterinarian to ensure that our animals are healthy, humanely treated, and receive the best care possible

Did you know that the average beef cow in the United States will be sold at least 4 times and spends its life in at least 3 to 4 different facilities? Not our animals!  Our cattle and sheep are allowed to graze freely on our large pastures.  The trip to the processor is the only time our animals leave the farm.  And we use a processing facility right here in South Carolina that is USDA Inspected.  So, our cattle and sheep have no added stress from crowded feedlots, long cross-country trips or unnecessary handling.  Low stress equals healthy animals, and health animals mean a safe, high quality product for your family.

Before our processor cuts and packages the beef, it is stored in a cooler and naturally dry aged a minimum of 21 days.  That's about twice as long as most commercial packing plants age their product.  Our lamb is dry-aged for at least 16 days.  We do not use any chemicals or water that might change the flavor or quality of the meat.  "Dry Aging" gives us naturally tender meat with a full, right flavor.  After aging, the meat is cut, packaged and then vacuum sealed and frozen.  The result is a professionally packaged, safe and delicious product that is far superior to commercially produced beef and lamb.

Most beef and lamb in this country comes from large meat packing companies that purchase their meat from huge feedlot operations.  You have no way of knowing what the animals have been fed or how they have been handled.  With Moss Hill Farms products you know you are getting meat that has been humanely raised on pasture at our farm, locally processed in a state of the art facility, and that we never give artificial hormones or antibiotics of any kind.  We want to provide you with the same beef and lamb that we feed to our own family.
